Pumpkin Drop Cookies

This recipe is adapted from my Great Grandma’s Recipe for Banana drop cookies. Substituting pumpkin for banana and adding some spices it makes a yummy cake like cookie!

  • 2 1/4 cup sifted flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • 2/3 cup shortening
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/8 tsp ginger
  • 1/8 tsp allspice
  • 1/4 tsp cinnamon 
  • 1 tsp vanilla
  • 1/4 tsp cinnamon ( to sprinkle on top)
  • 1 TBSP sugar ( to sprinkle on top )

Sift together flour, sugar, salt, baking powder, baking soda and spices.  Cut in shortening.  Add eggs, pumpkin, and vanilla.  Mix until blended.  Drop by spoonfuls on a ungreased cookie sheet.  Sprinkle with cinnamon sugar.  Bake at 400 deg. about 12 min.

Old Fashioned Oatmeal Cookies with Apple Cider

This is my Grandma Hazel’s Old Fashioned Oatmeal cookie recipe that I decided to give a twist to! Apple Cider! Let me know what you think?

  • 1 cup raisins
  • 1 cup apple cider

Simmer raisins and cider for 20-30 minutes. Strain out raisins and reduce the juice to 1/2 cup of liquid. Set aside raisins and juice until we add them later.

  • 3/4 cup butter
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla

Cream together well. Add raisins and reserved juice and stir together.

  • 2 1/2 cup flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp cloves, ground
  • 1/2 cup chopped nuts
  • 2 cups rolled oats

Combine all the dry ingredients with the above raisin mixture and mix. Drop tablespoon fulls on cookie sheet and bake at 400 degrees 10-12 minutes until done.

Dad’s Favorite-Peanut Butter cookie

  • 1 Cup Shortening
  • 1 Cup White sugar
  • 1 Cup Brown sugar
  • 1 Cup Peanut Butter
  • 2 Eggs (beaten)
  • 2 tsp Bakimg soda
  • 2 1/2-3 cups Flour
  • 1/4 teaspoon salt

  Cream together shortening and sugars.  Add Peanut butter and beaten eggs.  Them mix in Flour, Baking soda, and salt.  Refrigerate at least one hour.  Roll into balls and place on cookie sheet and flatten with a fork.  Bake at 325 degrees 10-12 minutes or until done.

Maker’s Mark Pecan Balls

  Easy Christmas cookie?  Not sure if you can technically call them a cookie, but a delicous holiday treat!

  • 1 Cup Graham cracker crumbs
  • 1 Cup chopped Pecans
  • 1 Cup Powdered sugar ( plus some extra to roll them in)
  • 2 TBSP Cocoa powder
  • 1 TBSP melted butter
  • 1/4 cup Maker’s Mark Bourbon

Combine all ingredients together in a bowl and mix well.  You should be able to form into a ball, if to dry add a little more Bourbon.  If to wet add some more sugar and graham cracker crumbs.  Roll finished balls in powdered ugar and Enjoy!

Banana Drop Cookies Recipe

  • 3/4 tsp salt

  • 1 cup mashed bananas (about 2-3 over ripe bananas)
  • 1 tsp vanilla
  • 1/4 tsp cinnamon ( to sprinkle on top)
  • 1 TBSP sugar ( to sprinkle on top )
  • ( optional but recommended is adding 6 oz chocolate chips)

Sift together flour, sugar, salt, baking powder, baking soda.  Cut in shortening.  Add eggs, bananas, and vanilla.  Mix until blended.  Drop by spoonfuls on a ungreased cookie sheet.  Sprinkle with cinnamon sugar.  Bake at 400 deg. about 12 min.

My Great-Grandma Cole made these all the time.  They were one of my favorities as a child.
