Baked Souffle Pancake

This one is for all the Dad’s out there. Need a quick and easy breakfast for the kids? Well this one is super easy and is sure to “WOW” and impress them!

What you will need:

  • 1/2 cup flour
  • 1/2 cup milk
  • 3 eggs
  • pinch of salt
  • 2 TBSP melted butter

In a mixing bowl whisk together the milk and eggs until well combined…think french toast batter. Next whisk in your flour and salt until all the lumps are gone. Now whisk in your 2 TBSP of melted butter until well mixed in.

You are going to need an oven proof baking pan. Cake pan, saute pan or baking dish. These can have a tendancy to stick so a non stick or glass dish would be prefered. Spray with non stick spray or lightly grease.

Pour in your batter and place in a 450 degree oven for 15 min.

Boom! Thats it 15 min later you have a puffy golden brown pancake! Drizzle with syrup, fill with fruit filling such as blueberries, apples, or strawberries or simply dust with powdered sugar!

Dad’s you love this recipe because it’s so easy and the kids will think you such a cool Chef!

How to Make Mango Tequila

IMG_20110504_092013

Cinco De Mayo is nearly upon us so I wanted to share one of my favorite recipes for Mango Tequila!

Sweet fruity and yet oh so potent! Harsh tequila becomes so much smoother and drinkable when infused with mango!

Here is what you will need:

  • 4 cups peeled and sliced Mango
  • 1/5 bottle (750ml) of Tequila
  • 2 qt bottle/pitcher
  • coffee filter/strainer

Super super easy to do. Peel and slice your mangos and and place in your pitcher. Cover with Tequila and place in the refridgerator for 30 days. Shake your container once a day.

The really hard part is the waiting! After 30 days strain and bottle. Keep in a cool dark place or as I prefer to do chilled in the freezer so its ready for your next Fiesta!

How To Make Skittles Vodka

IMG_20110501_161004

I like to cover a lot of topics on my blog, mostly recipes. Good drink being a very important part of enjoying life I have done some videos on food and beer pairing.

This is a somewhat new area to blog about but there are many tasty homemade liquor recipes that are super easy and a lot of fun!

Skittles Vodka Recipe

What you will need-

  • 1 lb Bag of Skittles Candy
  • 1/5 bottle (750ml) Vodka
  • 5 screw top bottles
  • 5 Coffee filters for straining
  • Funnel

This is super easy! Step one is to open your bag of Skittles candy and sort by color. Placing all the yellow ones in a bottle, all the green….etc. Once you have 5 bottles of different color Skittles.

Using your funnel pour about 5 oz of vodka into each bottle so that they are all evenly filled. Screw on the top and shake each bottle vigorously.

Allow bottles to sit overnight and re-shake. All the candy should be dissolved but you will notice the white scum. Thats what we will use the coffee filters for.

I found it easiest to clean my coffee maker well and pour the vodka into the filter catching it in the clean carafe below. Change filters for each color, I made sure to squeeze as much of the vodka as I could from the filter. Make sure you clean your bottles and using the funnel refill with your strained vodka.

Place your fruit flavored vodka in your freezer and chill well. They are now ready for you to do some tasty shots or mix with Sprite!
