Sour Milk is to be Treasured!

Bell’s Brewing Hopslam Ale and Tangerine Salmon

Bell’s Brewing Hopslam Ale is an excellant and much anticipated pleasure. I decided to do a food pairing with this awesome beer.

I prepared a tangerine salmon with spicy oriental mustard to go with this beer. I really loved the tangerine with the Hopslam! I didn’t do it in my video but I would really recommend adding some shallots to the tangerine juice from the pan and making a beurre blanc or butter sauce. Hopslam is very drinkable but with the higher alcohol content this dish really would benefit from some more fat. I generally like some spice with hoppy beer and the mustard was quite spicy. Horesradish or hot peppers would probably be good as well.

The tangerine is an awesome pairing even better as a beurre blanc. It would go well with pork, duck, or a meaty seared fish such as tuna or swordfish.

Stone Brewing Oaked Arrogant Bastard & Orange Rosemary Chili Glazed Pork

I decided to do a food and beer pairing with Stone Brewing Company Oaked Arrogant Bastard Ale.

For this pairing I am making some rosemary chili pork with an orange and grapefruit glaze.  The hoppy character of this beer lends its self well to citrus and also some heat.  So feel free to kick up the heat factor with some hot sauce!

Some other good pairing ideas are BBQ especially with some citrus in the sauce, pizza with pineapple and spicy peppers or spicy sauce.

I really wanted to pair it with a duck a’la orange which would be great with it especially if you add a spicy component to the dish!

Dogfish Head Beer and Food Pairing

 

I really like how the sun dried plums complement this beer.  The BonBon’s I made are alright for a small beer sample in a tasting situation.  I think a rich buttery almond cake pound cake type thing with a plum filling would be better with a larger pour of this beer.  With the high abv of this beer you need to be putting something more substantial in your belly!

I really like dark fruits for this one and wouldn’t go over the top with chocolates or coffee.  A little in a subtle fashion would be alright.  May allow you to pick up more of the nuances of this beer which tend to come out as it gets warmer.  Fatty foods are perfect with this high alcohol beer.

Grandma Hazel’s Cherry Torte

Amazing Dessert Recipe

½ c butter
1 ½ c sugar
4 eggs, separated
2/3 c sifted flour
1 tsp baking powder
8oz maraschino cherries, drained, chopped, reserve juice
¼ tsp salt
½ c chopped nuts
1c heavy cream

Cream butter + 1/2 c sugar, gradually beat in egg yolks. Sift flour, baking powder, salt. Add creamed mixture, mix well. Spread over bottom of two greased, floured 8″ round pans (will be thin layer) wax or parchment paper on the bottom is very helpful.

Beat egg whites until foamy; gradually add 1c sugar until soft peaks form. Spread over cake batter. Sprinkle nuts over meringue mixture.

Bake at 350 until lightly brown (25-30 min). Cool on rack.

This is a pretty easy recipe altough a little delicate to work with.  The cake meringue recipe is GREAT and can be easily used along with chocolate and other various filling and nut combinations.  The cakes is moist and buttery while the meringue is sweet and crispy so they go together well.
