Authentic Oriental Sweet and Sour Sauce

Ingredients:

Oil

Ginger

Garlic

Green onion

Ketchup

Lemon juice

White vinegar

Orange juice

Sugar

Honey

Salt

Brandy

Arrowroot

 

Amount:

½  cup

1 TBSP

1 TBSP

1 TBSP

1 Qt

1 cup

1 cup

1 Qt

4 ½  cups

½  cup

1 TBSP

½  cup

as needed

Methods:

1. Heat oil.  Saute ginger, garlic, and green onion untill you can smell the aroma.

2.Add Ketchup, Lemon juice, white vinegar, orange juice, sugar and honey.
3.Bring to a boil and thicken with a slurry of arrowroot and water.
4.Add Brandy and season with salt and white pepper.
5.May be garnished by adding diced pieces of fruit.

An excellant sauce for Sweet and Sour Pork or Chicken!

Chocolate Flourless Dessert

An excellent decadent chocolate dessert.  Contains no flour so it is excellant for those with flour allergies.

  • 1 # Semi-Sweet Chocolate ( cut up )
  • 8 oz Butter
  • 1/4 cup Coffee, Espresso, or Liquor
  • 8 Cold Eggs

Melt Chocolate, butter, and liquor together over a double boiler.  Whip eggs on med high speed 5 min until volume is about 1 quart.  Fold into melted chocolate in 3 additions.  Line a springform pan with parchment paper and spray with non stick spray.  Bake in a hot water bath at 325 degrees 22-25 min until 140 degrees internal temperature.  Cool and chill well.

Tempura Batter ( AKA Super Batter)

This is an excellent Tempura batter that stays crispy even when held in a steam table.  Use for your favorite Chinese recipes.

  • 9 cups Flour
  • 1 cup Cornstarch
  • 8 TBSP Baking Powder
  • 10 1/2 Cups Water
  • 1/2 cup Sesame oil

Combine all dry ingredients.  Add water and sesame oil and mix together well.  No need to refrigerate.
