I chose deep dish to tackle first because in a lot of ways it’s the easiest to perfect. Especially in a home oven, it is the fastest crust to make, but generally takes the longest to cook. It is very yummy ( is there a pizza that isn’t? )
The crust recipe I used is…
- 2 cups flour
- 1 cup water
- packet yeast
- 1/8 tsp salt
- 4 TBSP olive oil
- 2 TBSP Cornmeal
Combine all ingredients just until incorporated and then let rest 30 min.
After the 30 min knead until smooth and elastic, cover and rest 2-4 and let rise.
Roll out dough and place in a deep dish pan or cast iron pan and let rise.
Finish with
- 2 cups mozzarella cheese, on the bottom
- 1/2 cup pepperoni
- 1/2 cup sliced mushrooms
- 1 cup tomato sauce poured over the top of everything
Bake at 425 30-40 minutes until done. Feel free to add any of your favorite toppings. As far a sauce goes I find simple is best with a little bit of herbs. No need to cook the sauce as it will cook in the oven. Some good canned peeled Roma’s ground up with some fresh herbs does the trick!
